  4. Attach the candy thermometer to the pan. Keep stirring and cook the mixture until it reaches 295°F (146°C) – the hard crack stage. This will take about 10–15 minutes; don’t walk away.
  5. Immediately remove from heat and stir in the vanilla extract.
  6. Quickly pour the toffee into the prepared pan and spread evenly with a heatproof spatula. Let it sit for 5 minutes to begin to harden.
  7. Meanwhile, melt the white chocolate either in a microwave in 30-second bursts or over a double boiler until smooth.
  8. Once the toffee is just set but still slightly warm, pour the melted white chocolate on top and spread evenly.
