Air Fryer Zucchini Chips

Ingredients
  

  • 2 medium zucchinis About 400 grams total.
  • 2 tablespoons olive oil
  • 1/3 cup grated Parmesan cheese Substitute with nutritional yeast for dairy-free version.
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • as needed cooking spray For air fryer basket.

Equipment

  • 1 air fryer
  • 1 sharp knife or mandoline
  • 1 mixing bowl
  • 1 tongs
  • 1 cooking spray or brush

Method
 

  1. Slice the zucchinis into 1/8-inch (3 mm) thin rounds using a sharp knife or mandoline for uniform thickness.
  2. Pat the zucchini slices dry with a paper towel to remove excess moisture.
  3. In a mixing bowl, toss the zucchini slices with olive oil until evenly coated.
  4. In a shallow dish, combine the grated Parmesan, panko breadcrumbs, garlic powder, salt, and black pepper.
  5. Coat each zucchini slice in the breadcrumb mixture, pressing lightly to adhere.
  6. Lightly spray the air fryer basket with cooking spray.
  7. Arrange the coated zucchini slices in a single layer in the air fryer basket.
  8. Air fry at 200°C (400°F) for 8 minutes. Flip the chips and air fry an additional 5–7 minutes or until golden brown and crispy.
  9. Remove and let cool slightly before serving. Repeat with remaining zucchini slices if necessary.

Notes

For extra crispiness, make sure the zucchini slices are not overlapping in the air fryer.
You can substitute Parmesan with nutritional yeast for a dairy-free version.
Best served immediately for maximum crunch.
Serve with your favorite dipping sauce, such as ranch or spicy mayo.
