Air fryer zucchini fries are a healthy, crispy alternative to traditional fries. They’re easy to make, perfect as a side dish or snack, and delightfully guilt-free. Enjoy these crunchy fries with your favorite dip.

Ingredients
  

  • 2 medium zucchini About 450 g.
  • 2 large eggs
  • 80 g panko breadcrumbs About 1 cup; Panko gives a crispier texture.
  • 30 g grated Parmesan cheese About 1/4 cup.
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • N/A N/A cooking spray or olive oil For spraying.

Equipment

  • 1 Air fryer
  • 1 Vegetable peeler optional
  • 1 Knife
  • 2 Bowls for dredging
  • 1 Tongs or fork

Method
 

  1. Wash the zucchini. Cut off the ends, then slice each zucchini in half lengthwise, and then into 1-cm thick fries (like thick matchsticks).
  2. In a bowl, beat the eggs.
  3. In a separate bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, Italian herbs, salt, and black pepper.
  4. Dip each zucchini fry into the beaten egg, allow excess to drip off, then coat well in the breadcrumb mixture. Set aside.
  5. Preheat your air fryer to 200°C (390°F) for 3 minutes.
  6. Arrange the zucchini fries in a single layer in the air fryer basket. Spray lightly with cooking spray or mist with olive oil.
  7. Air fry for 10-12 minutes, shaking the basket halfway through, until golden and crispy.
  8. Repeat in batches if needed.
  9. Serve hot, with your favorite dip.

Notes

Make sure not to overcrowd the air fryer basket for even crisping.
Try with a side of marinara or garlic yogurt dip.
You can substitute Panko with regular breadcrumbs, but Panko gives a crispier texture.
For gluten-free fries, use gluten-free breadcrumbs.
