- Wash the zucchini. Cut off the ends, then slice each zucchini in half lengthwise, and then into 1-cm thick fries (like thick matchsticks).
- In a bowl, beat the eggs.
- In a separate bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, Italian herbs, salt, and black pepper.
- Dip each zucchini fry into the beaten egg, allow excess to drip off, then coat well in the breadcrumb mixture. Set aside.
- Preheat your air fryer to 200°C (390°F) for 3 minutes.
- Arrange the zucchini fries in a single layer in the air fryer basket. Spray lightly with cooking spray or mist with olive oil.
- Air fry for 10-12 minutes, shaking the basket halfway through, until golden and crispy.
- Repeat in batches if needed.
- Serve hot, with your favorite dip.
Notes
Make sure not to overcrowd the air fryer basket for even crisping.
Try with a side of marinara or garlic yogurt dip.
You can substitute Panko with regular breadcrumbs, but Panko gives a crispier texture.
For gluten-free fries, use gluten-free breadcrumbs.
