  • 4 pieces boneless, skinless chicken breasts About 680g/1.5 lbs total.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano

Method
 

  1. Preheat your oven to 220°C (425°F).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix together the salt, black pepper, garlic powder, paprika, and oregano.
  4. Drizzle olive oil over the chicken breasts and rub it in evenly on both sides.
  5. Sprinkle the seasoning mixture evenly over both sides of the chicken breasts.
  6. Place the chicken breasts in a single layer in the baking dish.
  7. Bake for 20-25 minutes, or until the internal temperature reaches 74°C (165°F).
  8. Remove the chicken from the oven and let it rest for 5 minutes to retain juices before serving.
  9. Optional: Tent the baking dish with aluminum foil during the first 15 minutes of baking, then uncover for the last 10 minutes for slight browning.
