Buns

These soft homemade buns are perfect for burgers, sandwiches, or simply enjoying with butter. Fluffy inside and lightly golden on top, they’re easy to make and sure to be a staple in your kitchen.

Ingredients
  

  • 400 grams all-purpose flour
  • 240 ml warm milk about 100°F/38°C
  • 45 grams unsalted butter, softened
  • 30 grams granulated sugar
  • 7 grams instant yeast approximately 2 1/4 teaspoons or 1 packet
  • 6 grams salt 1 teaspoon
  • 1 large egg
  • 2 tablespoons additional milk for brushing

  • 1 large mixing bowl
  • 1 measuring cups and spoons
  • 1 kitchen scale (optional)
  • 1 wooden spoon or stand mixer with dough hook
  • 1 baking sheet
  • 1 parchment paper
  • 1 pastry brush
  • 1 clean kitchen towel

Method
 

  1. In a large mixing bowl, combine warm milk, yeast, and sugar. Stir and let sit for 5 minutes until slightly foamy.
  2. Add the softened butter, egg, salt, and half of the flour. Mix until just combined.
  3. Gradually add the remaining flour. Mix to form a soft dough.
  4. Knead the dough by hand on a lightly floured surface for 8–10 minutes, or use a stand mixer with dough hook for 6 minutes, until the dough is smooth and elastic.
  5. Place the dough in a lightly oiled bowl. Cover with a kitchen towel and let rise in a warm place for 1 hour, or until doubled in size.
  6. Gently punch down the dough to release air. Divide into 8 equal pieces (about 85 grams each).
  7. Shape each piece into a ball and place on a parchment-lined baking sheet, spaced a few inches apart.
  8. Cover with a towel and let rise for 30 minutes, or until puffy.
  9. Preheat oven to 180°C (350°F).
  10. Brush the tops of the buns with a little milk.
  11. Bake for 18–20 minutes, until golden brown.
  12. Cool on a wire rack for at least 10 minutes before serving.

Notes

For a richer flavor, you can replace half the milk with cream.
Brushing with milk gives a soft crust, while egg wash yields a shiny, firmer top.
Add sesame seeds or poppy seeds before baking for a classic look.
