Ingredients

  • 400 g pasta (fettuccine or your choice)
  • 60 g unsalted butter
  • 300 ml heavy cream
  • 2 cloves garlic, minced
  • 120 g Parmesan cheese, freshly grated Use freshly grated cheese for best results.
  • 80 g Mozzarella cheese, freshly grated Use freshly grated cheese for best results.
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 tbsp fresh parsley, chopped Optional, for garnish.

Equipment

  • 1 large pot for boiling pasta
  • 1 large skillet or saucepan
  • 1 measuring cups and spoons
  • 1 colander
  • 1 wooden spoon or spatula
  • 1 grater for cheese

Method

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add the pasta and cook according to the package instructions until al dente (usually 9–11 minutes). Drain and set aside.
  2. While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the minced garlic and cook, stirring constantly, for about 1 minute until fragrant (do not let it brown).
  3. Pour in the heavy cream, stir well, and let it simmer for 2–3 minutes to heat through.
  4. Reduce the heat to low. Gradually stir in the grated Parmesan and mozzarella cheese. Keep stirring until the cheeses melt and the sauce becomes smooth and creamy.
  5. Season the sauce with salt and ground black pepper. Taste and adjust the seasoning if needed.
  6. Add the drained pasta to the skillet with the sauce. Toss well to coat every strand in the cheesy Alfredo sauce.
  7. Cook for another 1–2 minutes, allowing the pasta to absorb some of the sauce.
  8. Serve immediately, garnished with chopped fresh parsley and extra Parmesan if desired.

Notes

For extra flavor, you can add cooked chicken, shrimp, or sautéed mushrooms.
Whole milk can be substituted for some of the cream if you prefer a lighter sauce.
Use freshly grated cheese—the pre-grated types don’t melt as smoothly.
Serve with a crisp green salad or garlic bread for a delicious meal.
