Method
- Preheat your oven to 200°C (400°F).
- Arrange the asparagus spears in a single layer in a lightly oiled baking dish.
- In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly to form a roux.
- Gradually add the milk, whisking to prevent lumps. Add garlic powder, salt, and black pepper. Continue cooking and whisking until the sauce thickens (about 2-3 minutes).
- Remove the sauce from heat and stir in cheddar cheese, half the mozzarella, and all the parmesan cheese. Stir until smooth and melted.
- Pour the cheese sauce evenly over the asparagus. Sprinkle the remaining mozzarella on top. If using, sprinkle breadcrumbs over the cheese layer.
- Bake for 15-20 minutes, or until the cheese is bubbly and the top is golden.
- Remove from the oven and let it cool for a couple of minutes before serving.
Notes
For extra flavor, add a pinch of chili flakes or swap cheddar with Gruyère or another cheese of your choice.
Make sure the asparagus is trimmed evenly so it cooks uniformly.
If you want a crunchier top, broil the dish for the last 2 minutes of baking.
