Cheesy Egg Noodles

Ingredients
  

  • 300 g egg noodles
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • cups cheddar cheese, grated
  • ¼ cup Parmesan cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • to taste chopped parsley for garnish Optional

Method
 

  1. Bring a large pot of salted water to a boil. Add egg noodles and cook according to package directions, typically 6–8 minutes, until tender. Drain and set aside.
  2. While the noodles cook, melt butter in a medium saucepan over medium heat. Add flour, whisk, and cook for 1 minute to form a roux.
  3. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 2–3 minutes.
  4. Reduce the heat to low, then add cheddar and Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
  5. Season the cheese sauce with salt and black pepper.
  6. Combine the drained noodles with the cheese sauce, tossing well to coat every noodle.
  7. Serve hot, garnished with chopped parsley if desired.

Notes

For extra flavor, mix in cooked bacon bits or sautéed mushrooms. You can also use other cheeses such as mozzarella or jack for different flavor profiles. To make it a complete meal, add steamed vegetables or shredded rotisserie chicken.
