Ingredients
  

  • 8 pieces corn tortillas 6-inch size
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups enchilada sauce store-bought or homemade
  • 2 tablespoons olive oil
  • 1 small chopped onion approximately 100g
  • 2 cloves minced garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro optional

  • 1 medium saucepan
  • 1 large mixing bowl
  • 1 spoon or spatula
  • 1 foil
  • 1 oven

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, heat the olive oil over medium heat. Add chopped onion and sauté for 3 to 4 minutes until soft. Add minced garlic and sauté for another 1 minute. Season with salt and black pepper.
  3. Pour 1/2 cup of the enchilada sauce into the bottom of the baking dish and spread evenly.
  4. In a large bowl, mix together the cheddar and Monterey Jack cheeses. Reserve 1/2 cup of the mixture for topping.
  5. Briefly warm the tortillas (cover with a damp paper towel and microwave for 30 seconds) until pliable.
  6. Place a few tablespoons of the cheese mixture onto each tortilla, roll up tightly, and lay seam-side down in the sauced baking dish.
  7. Pour the remaining enchilada sauce evenly over the rolled tortillas.
  8. Sprinkle with the reserved cheese mixture.
  9. Cover the baking dish with foil and bake for 15 minutes. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
  10. Garnish with chopped fresh cilantro, if desired, and serve hot.

Notes

You can easily add cooked chicken, beans, or ground beef to the cheese filling for a heartier meal.
For extra flavor, use smoky chipotle or mild green enchilada sauce.
Serve with rice, beans, or a simple salad on the side.
