- Preheat your oven to 375°F (190°C).
- In a medium saucepan, heat the olive oil over medium heat. Add chopped onion and sauté for 3 to 4 minutes until soft. Add minced garlic and sauté for another 1 minute. Season with salt and black pepper.
- Pour 1/2 cup of the enchilada sauce into the bottom of the baking dish and spread evenly.
- In a large bowl, mix together the cheddar and Monterey Jack cheeses. Reserve 1/2 cup of the mixture for topping.
- Briefly warm the tortillas (cover with a damp paper towel and microwave for 30 seconds) until pliable.
- Place a few tablespoons of the cheese mixture onto each tortilla, roll up tightly, and lay seam-side down in the sauced baking dish.
- Pour the remaining enchilada sauce evenly over the rolled tortillas.
- Sprinkle with the reserved cheese mixture.
- Cover the baking dish with foil and bake for 15 minutes. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
- Garnish with chopped fresh cilantro, if desired, and serve hot.
Notes
You can easily add cooked chicken, beans, or ground beef to the cheese filling for a heartier meal.
For extra flavor, use smoky chipotle or mild green enchilada sauce.
Serve with rice, beans, or a simple salad on the side.
