Cheesy Fries Recipe

Ingredients
  

  • 800 grams potatoes about 4 medium
  • 600 ml vegetable oil for frying or as needed for baking
  • 1 teaspoon salt plus extra for sprinkling
  • 30 grams butter
  • 2 tablespoons all-purpose flour
  • 250 ml milk
  • 200 grams cheddar cheese, grated
  • 1/2 teaspoon paprika optional
  • chopped chives or parsley optional, for garnish

  • 1 Medium saucepan
  • 1 Whisk
  • 1 Cutting board
  • 1 Large bowl
  • 1 Paper towels

Method
 

  1. Peel the potatoes (optional) and cut them into fries about 1 cm thick. Rinse under cold water to remove excess starch, then pat dry thoroughly with paper towels.
  2. Heat vegetable oil in a deep fryer or sturdy pot to 180°C (350°F). Fry the potatoes in batches for 4-5 minutes or until golden and crispy. Drain on paper towels and sprinkle with salt while hot.
  3. In a medium saucepan over medium heat, melt the butter. Add the flour and cook, whisking, for 1 minute.
  4. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the mixture starts to thicken (about 3-5 minutes).
  5. Lower the heat and add grated cheddar cheese, whisking until melted and smooth. Stir in paprika and season with extra salt if desired.
  6. Arrange hot fries on a serving plate. Pour the warm cheese sauce over the fries. Garnish with chopped chives or parsley if desired.
  7. Serve immediately.

Notes

Double-frying the potatoes (frying once at lower heat, then again at high heat) makes them even crispier.
You can add cooked bacon bits, jalapeños, or diced tomatoes for variations.
Use a blend of cheeses for extra flavor, such as mozzarella or Monterey Jack.
For a spicy kick, add a pinch of cayenne pepper to the cheese sauce.
