Ingredients
  

  • 400 grams fresh green beans
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup Panko breadcrumbs Optional for topping.

  • 1 oven-safe baking dish about 8x8 inch or similar

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. Trim the ends off the green beans and cut them in half if preferred.
  3. Bring a large pot of salted water to a boil. Add the green beans and blanch for 4-5 minutes until just tender and bright green.
  4. Drain green beans immediately in a colander and run under cold water to stop the cooking. Set aside.
  5. In a small saucepan, melt the butter over medium heat. Add the flour and whisk for 1 minute to make a roux.
  6. Slowly pour in the milk, whisking constantly, and cook for 2-3 minutes until slightly thickened.
  7. Lower the heat and add 3/4 cup cheddar cheese, stirring until melted and smooth. Season with salt, pepper, and garlic powder.
  8. Place the blanched green beans in the baking dish. Pour the cheese sauce evenly over the green beans and toss gently to coat.
  9. Sprinkle remaining cheddar cheese and Parmesan over the top. If using, add the panko breadcrumbs for extra crunch.
  10. Bake for 10-12 minutes, or until bubbly and golden on top. Broil for an additional 1-2 minutes for a crispier cheese topping, if desired.
  11. Let cool for a few minutes before serving.

Notes

You can substitute frozen green beans if fresh are not available. For extra flavor, add chopped cooked bacon or a pinch of nutmeg to the cheese sauce. This recipe can be doubled for larger gatherings.
