Ingredients
  

  • 200 grams tortilla chips
  • 180 grams cheddar cheese, shredded
  • 100 grams Monterey Jack cheese, shredded
  • 1 medium jalapeño, sliced About 20 grams.
  • 30 grams black olives, sliced Optional.
  • 1 medium fresh tomato, diced About 120 grams.
  • 2 stalks green onions, sliced About 20 grams.
  • 80 grams sour cream For serving.
  • 120 grams salsa For serving.

Equipment

  • 1 baking sheet
  • 1 parchment paper
  • 1 cheese grater if using block cheese
  • 1 small saucepan for cheese sauce, optional
  • 1 spoon

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Line a baking sheet with parchment paper.
  3. Spread the tortilla chips evenly on the baking sheet to create a single layer.
  4. Evenly sprinkle the shredded cheddar and Monterey Jack cheese over the chips, making sure every chip gets some cheese.
  5. Scatter the sliced jalapeños, black olives, diced tomato, and green onions over the cheese-topped chips.
  6. Bake in the oven for 7-8 minutes, or until the cheese is fully melted and bubbling.
  7. Remove from the oven and let cool for 1 minute.
  8. Serve immediately with sour cream and salsa on the side.

Notes

For an extra cheesy nacho, add more cheese or drizzle with a quick homemade cheese sauce after baking. Add browned ground beef or beans for more protein. Adjust the spice level by using more or less jalapeño, or swap for sweet bell peppers for a milder version. Nachos are best eaten fresh and hot from the oven for maximum crunch!
