- Place tortillas on a clean cutting board. Spread ½ cup (50g) of cheddar and ½ cup (50g) of mozzarella evenly over one half of each tortilla. Fold each tortilla in half to cover the cheese and form a half-moon shape.
- Heat ½ tablespoon of butter in a large skillet over medium heat. Once melted, place one quesadilla in the skillet. Cook for 2–3 minutes until the bottom is golden and crispy.
- Flip the quesadilla using a spatula and cook for another 2–3 minutes, until the other side is golden and the cheese has melted.
- Remove from the skillet and repeat with remaining quesadillas, adding more butter as needed.
- Let the quesadillas cool for one minute, then cut them into wedges with a knife.
- Serve hot with salsa, guacamole, or sour cream on the side.
Notes
Combine cheddar and mozzarella for a gooey, flavorful melt, but you can use any cheese you like.
Add cooked chicken, beans, or sautéed vegetables for extra protein and flavor.
To keep finished quesadillas warm, place them in a low oven (200°F/95°C) until ready to serve.
