Cheesy Quesadilla

This classic cheesy quesadilla is perfect for a quick lunch or snack. Crispy on the outside and oozing with melted cheese inside, it’s easy to make and absolutely delicious. Serve with salsa, guacamole, or sour cream for a complete experience.

Ingredients
  

  • 4 large flour tortillas 8-inch diameter
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • as needed salsa Optional for serving
  • as needed guacamole Optional for serving
  • as needed sour cream Optional for serving

Equipment

  • 1 large skillet nonstick or cast iron
  • 1 spatula
  • 1 cutting board
  • 1 measuring cups and spoons

Method
 

  1. Place tortillas on a clean cutting board. Spread ½ cup (50g) of cheddar and ½ cup (50g) of mozzarella evenly over one half of each tortilla. Fold each tortilla in half to cover the cheese and form a half-moon shape.
  2. Heat ½ tablespoon of butter in a large skillet over medium heat. Once melted, place one quesadilla in the skillet. Cook for 2–3 minutes until the bottom is golden and crispy.
  3. Flip the quesadilla using a spatula and cook for another 2–3 minutes, until the other side is golden and the cheese has melted.
  4. Remove from the skillet and repeat with remaining quesadillas, adding more butter as needed.
  5. Let the quesadillas cool for one minute, then cut them into wedges with a knife.
  6. Serve hot with salsa, guacamole, or sour cream on the side.

Notes

Combine cheddar and mozzarella for a gooey, flavorful melt, but you can use any cheese you like.
Add cooked chicken, beans, or sautéed vegetables for extra protein and flavor.
To keep finished quesadillas warm, place them in a low oven (200°F/95°C) until ready to serve.
