Ingredients
  

  • 800 grams Yukon Gold or red potatoes, cut into 2.5 cm cubes
  • 30 ml olive oil
  • 20 grams dry ranch seasoning mix
  • 120 grams shredded cheddar cheese Can substitute with pepper jack or mozzarella.
  • 30 grams grated Parmesan cheese
  • 2 grams salt
  • 1 gram black pepper
  • 10 grams chopped fresh chives or green onions For garnish (optional).

  • 1 baking sheet
  • 1 aluminum foil or parchment paper
  • 1 chef's knife
  • 1 cutting board
  • 1 spatula

Method
 

  1. Preheat your oven to 220°C (425°F). Line your baking sheet with aluminum foil or parchment paper for easy cleanup.
  2. Wash and dry potatoes. Cut them into 2.5 cm (1-inch) cubes.
  3. In a large mixing bowl, toss the potato cubes with olive oil, ranch seasoning mix, salt, and black pepper until evenly coated.
  4. Spread the seasoned potatoes evenly on the prepared baking sheet in a single layer.
  5. Bake in the preheated oven for 30-35 minutes, stirring halfway through, until potatoes are golden brown and tender.
  6. Remove from the oven. Sprinkle shredded cheddar cheese and grated Parmesan evenly over the hot potatoes.
  7. Return the baking sheet to the oven for 5-7 more minutes, until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly. Garnish with chopped chives or green onions, if desired.
  9. Serve warm and enjoy.

Notes

For extra flavor, add cooked bacon bits before returning the potatoes to the oven with cheese.
You can substitute cheddar with pepper jack or mozzarella for a different cheesy taste.
Make sure potatoes are spread in a single layer to ensure even roasting.
This dish pairs well with grilled meats, roasted chicken, or as part of a brunch spread.
