- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, toss the diced potatoes, sliced sausage, diced onion, and minced garlic with the olive oil, salt, pepper, thyme, and paprika until evenly coated.
- Transfer the mixture to a large oven-safe skillet or spread evenly in a baking dish.
- Cover with aluminum foil and bake for 25 minutes, until potatoes start to soften.
- Remove foil, stir gently, and sprinkle the shredded cheddar cheese evenly over the top.
- Return the dish to the oven, uncovered, and bake for another 12-15 minutes, until the cheese is melted, bubbly, and golden, and potatoes are fork-tender.
- Remove from the oven, sprinkle with fresh parsley if desired, and let rest for 5 minutes before serving.
Notes
You can substitute smoked sausage with your favorite type, such as chicken sausage or chorizo.
For an extra kick, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
This recipe works well with other melting cheeses like Monterey Jack or Mozzarella.
