Ingredients
  

  • 4 medium russet potatoes, peeled and cubed About 800 g.
  • 350 g smoked sausage e.g., kielbasa, sliced into rounds.
  • 180 g cheddar cheese, shredded
  • 1 medium onion, diced About 100 g.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (6 g)
  • 1/2 teaspoon black pepper (1.5 g)
  • 1/2 teaspoon dried thyme (1 g)
  • 1/2 teaspoon paprika (1 g)
  • 2 tablespoons chopped fresh parsley Optional, for garnish.

Equipment

  • 1 large oven-safe skillet or baking dish approx. 9x13 inch
  • 1 cutting board
  • 1 mixing bowl
  • 1 aluminum foil optional

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, toss the diced potatoes, sliced sausage, diced onion, and minced garlic with the olive oil, salt, pepper, thyme, and paprika until evenly coated.
  3. Transfer the mixture to a large oven-safe skillet or spread evenly in a baking dish.
  4. Cover with aluminum foil and bake for 25 minutes, until potatoes start to soften.
  5. Remove foil, stir gently, and sprinkle the shredded cheddar cheese evenly over the top.
  6. Return the dish to the oven, uncovered, and bake for another 12-15 minutes, until the cheese is melted, bubbly, and golden, and potatoes are fork-tender.
  7. Remove from the oven, sprinkle with fresh parsley if desired, and let rest for 5 minutes before serving.

Notes

You can substitute smoked sausage with your favorite type, such as chicken sausage or chorizo.
For an extra kick, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
This recipe works well with other melting cheeses like Monterey Jack or Mozzarella.
Serve with a crisp side salad for a complete meal.
