Ingredients

  • 4 pieces Chicken breasts, boneless and skinless About 150g each.
  • 4 slices Ham, thinly sliced About 80g total.
  • 4 slices Swiss cheese, sliced About 80g total.
  • 60 g All-purpose flour About ½ cup.
  • 2 large Eggs Beaten.
  • 90 g Breadcrumbs About 1 cup.
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Paprika
  • 2 tablespoons Olive oil or melted butter

Equipment

  • 1 cutting board
  • 1 sharp knife
  • 1 meat mallet or rolling pin
  • 1 plastic wrap
  • 1 baking dish
  • 3 shallow bowls or plates
  • 1 toothpicks
  • 1 oven

Method

  1. Preheat your oven to 200°C (400°F). Grease a baking dish with a small amount of olive oil or butter.
  2. Place each chicken breast between two pieces of plastic wrap. Use a meat mallet or rolling pin to gently pound the chicken to about 1 cm (½ inch) thickness.
  3. Season both sides of chicken breasts with salt, pepper, and paprika.
  4. Place one slice of ham and one slice of Swiss cheese on each chicken breast. Roll each breast up tightly, securing with toothpicks.
  5. Prepare three shallow bowls: fill one with flour, one with beaten eggs, and one with breadcrumbs.
  6. Dredge each chicken roll in flour, tapping off excess. Dip in beaten eggs, then coat thoroughly in breadcrumbs.
  7. Place prepared chicken rolls seam-side down in the baking dish. Drizzle with melted butter or olive oil.
  8. Bake for 28-30 minutes, or until chicken is cooked through, and the outside is golden and crispy.
  9. Let stand for 5 minutes, remove toothpicks, and serve.

Notes

For extra crispiness, you can pan-fry the breaded chicken rolls in a bit of oil for 2-3 minutes per side before baking.
Substitute Gruyère or provolone for Swiss cheese if desired.
Serve with steamed vegetables or a simple salad for a complete meal.
