Method
- If using wooden skewers, soak them in water for 30 minutes.
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
- Add the chicken pieces to the marinade. Toss well to coat. Marinate for at least 20 minutes (30 minutes or up to 2 hours is best for deeper flavor).
- Preheat your grill or grill pan over medium-high heat.
- Thread chicken, bell pepper, onion, and zucchini alternately onto the skewers.
- Grill the kabobs for 12–15 minutes, turning every 3–4 minutes, until the chicken is cooked through and slightly charred on the edges.
- Remove from the grill and let rest for a couple of minutes before serving.
Notes
For best flavor, let the chicken marinate up to 2 hours in the fridge.
Serve with rice, pita, or a fresh salad.
You can substitute other vegetables such as mushrooms or cherry tomatoes if desired.
If grilling indoors, open a window or use the hood fan for ventilation.
