Chicken Kabobs

These juicy chicken kabobs are marinated in a zesty blend of Mediterranean spices and grilled to perfection with colorful veggies. Perfect for summer barbecues or weeknight dinners.

Ingredients
  

  • 600 grams boneless, skinless chicken breast Cut into 2.5 cm pieces.
  • 1 large red bell pepper Cut into 2.5 cm pieces.
  • 1 large red onion Cut into 2.5 cm pieces.
  • 1 medium zucchini Sliced into 1.5 cm rounds.
  • 3 tablespoons olive oil
  • 1 large lemon Juice of 1 lemon (about 3 tablespoons).
  • 2 cloves garlic Minced.
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Equipment

  • 1 cutting board
  • 1 sharp knife
  • 1 mixing bowl
  • 1 grill or grill pan
  • 4 metal or wooden skewers if using wooden, soak in water for 30 minutes
  • 1 tongs

Method
 

  1. If using wooden skewers, soak them in water for 30 minutes.
  2. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
  3. Add the chicken pieces to the marinade. Toss well to coat. Marinate for at least 20 minutes (30 minutes or up to 2 hours is best for deeper flavor).
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread chicken, bell pepper, onion, and zucchini alternately onto the skewers.
  6. Grill the kabobs for 12–15 minutes, turning every 3–4 minutes, until the chicken is cooked through and slightly charred on the edges.
  7. Remove from the grill and let rest for a couple of minutes before serving.

Notes

For best flavor, let the chicken marinate up to 2 hours in the fridge.
Serve with rice, pita, or a fresh salad.
You can substitute other vegetables such as mushrooms or cherry tomatoes if desired.
If grilling indoors, open a window or use the hood fan for ventilation.
