- In a mixing bowl, whisk together olive oil, lemon juice, soy sauce, and honey until combined.
- Add minced garlic, dried oregano, paprika, salt, and black pepper. Whisk again until all ingredients are well mixed.
- Place the chicken breasts in a plastic zip bag or shallow dish. Pour marinade over the chicken, ensuring all sides are coated.
- Seal the bag or cover the dish. Refrigerate and marinate for at least 30 minutes, ideally 2-8 hours for more flavor.
- Remove chicken from marinade (discard used marinade). Grill, bake, or pan-fry the chicken as desired until cooked through (internal temperature 75°C/165°F), about 6-8 minutes per side depending on thickness.
- Let the chicken rest for 5 minutes before slicing and serving.
Notes
Do not reuse marinade that has been in contact with raw chicken unless you boil it first.
This marinade also works well for chicken thighs, drumsticks, or wings; adjust cooking times as needed.
For extra flavor, reserve 2 tablespoons of the marinade before adding chicken, and drizzle over cooked chicken just before serving.
You can add chopped fresh herbs (like parsley or cilantro) before serving for extra freshness.
