Chicken Meatballs

Ingredients
  

  • 500 grams ground chicken
  • 60 grams breadcrumbs about 1/2 cup
  • 60 ml milk about 1/4 cup
  • 30 grams grated Parmesan cheese about 1/4 cup
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped) about 70 grams
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for greasing or frying

Equipment

  • 1 mixing bowl
  • 1 baking sheet
  • 1 parchment paper (optional)
  • 1 measuring cups and spoons
  • 1 large spoon or cookie scoop
  • 1 oven or frying pan

Method
 

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a small bowl, combine breadcrumbs and milk, then let sit for 2 minutes to soften.
  3. In a large mixing bowl, add ground chicken, soaked breadcrumbs, Parmesan, egg, minced garlic, chopped onion, parsley, oregano, salt, and black pepper. Mix until just combined, avoiding overmixing.
  4. With wet hands or a cookie scoop, form the mixture into small balls, placing them on the prepared baking sheet.
  5. Brush or drizzle the meatballs with olive oil.
  6. Bake in the preheated oven for 18-20 minutes, or until golden brown and cooked through, checking that the internal temperature reaches 74°C (165°F).
  7. Alternatively, heat olive oil in a skillet over medium heat and cook meatballs in batches for 10-12 minutes, turning to brown all sides until cooked through.
  8. Serve hot with your favorite sauce or over pasta, rice, or in a sub roll.

Notes

You can substitute ground turkey for chicken if desired.
Add chili flakes for a bit of heat.
To make them gluten-free, use gluten-free breadcrumbs.
Meatballs can be frozen after baking and reheated as needed.
