Ingredients
  

  • 2 large boneless, skinless chicken breasts About 400 grams.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise 120 ml.
  • 2 teaspoons Dijon mustard 10 ml.
  • 1 tablespoon lemon juice 15 ml.
  • 2 stalks celery, finely chopped About 80 grams.
  • 1/4 cup red onion, finely diced 30 grams.
  • 2 tablespoons chopped fresh parsley 8 grams.
  • 8 slices sandwich bread
  • to taste butter or lettuce leaves for serving Optional.

  • 1 large skillet or pan
  • 1 mixing bowl
  • 1 cutting board
  • 1 set measuring cups and spoons
  • 1 spoon or spatula

Method
 

  1. Season both sides of chicken breasts with salt and black pepper.
  2. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for about 7-8 minutes per side or until fully cooked through and juices run clear. Remove from skillet and let cool for 5 minutes.
  3. Dice the cooled chicken into small cubes.
  4. In a large mixing bowl, combine mayonnaise, Dijon mustard, lemon juice, celery, red onion, and parsley. Mix well.
  5. Add the diced chicken to the bowl. Gently fold until all ingredients are coated and well-mixed.
  6. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
  7. Lay out the bread slices. Scoop about 1/2 cup of chicken salad mixture onto 4 slices of bread. Top with lettuce leaves or thinly spread a little butter, if desired. Place remaining bread slices on top to form sandwiches.
  8. Slice sandwiches in half and serve immediately.

Notes

For a lighter version, substitute half the mayonnaise with plain Greek yogurt.
You can use leftover cooked chicken or rotisserie chicken instead of cooking chicken breasts from scratch.
Add chopped apples, grapes, or nuts for extra crunch and flavor.
Serve with potato chips, pickles, or a simple green salad.
