Ingredients
  

  • 500 grams boneless, skinless chicken breast (or thighs), cut into bite-sized pieces
  • 150 grams plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 2 cloves garlic, grated
  • 2 centimeters (about 1 teaspoon) fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped (about 180 grams)
  • 2 cloves garlic, minced
  • 2 centimeters (about 1 teaspoon) fresh ginger, grated
  • 1-2 green chilies, diced (optional) Adjust for spiciness
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1.5 teaspoons garam masala
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 400 grams canned crushed tomatoes
  • 150 milliliters heavy cream (or coconut cream) Substitute coconut cream for dairy-free version.
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon sugar (optional, balances acidity)
  • 1 bunch fresh cilantro/coriander leaves, chopped For garnish.

Equipment

Method
 

  1. In a mixing bowl, combine yogurt, lemon juice, cumin, coriander, garam masala, paprika, chili powder, salt, grated garlic, and grated ginger. Add the chicken pieces, mix well, cover, and marinate in the fridge for at least 20 minutes, or up to 4 hours.
  2. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add marinated chicken pieces (shake off excess marinade). Sear on all sides until browned and nearly cooked through, about 5–7 minutes. Remove chicken to a plate and set aside.
  3. In the same skillet, add another tablespoon of oil. Add chopped onions and sauté until soft and golden, 6–8 minutes. Stir in garlic, ginger, and green chilies, cooking for 1 minute until fragrant.
  4. Sprinkle in cumin, coriander, turmeric, garam masala, paprika, and chili powder. Stir constantly for 30 seconds to toast the spices.
  5. Pour in the crushed tomatoes and add salt. Stir well, reduce heat to medium-low, and simmer for 10–12 minutes, until slightly thickened. Add sugar if tomatoes are too acidic.
  6. Reduce heat to low. Stir in heavy cream and simmer for 3–4 minutes until the sauce becomes creamy and orange.
  7. Return browned chicken to the skillet with any juices. Simmer gently for 8–10 minutes until chicken is cooked through and sauce is thickened. Taste and adjust seasoning if needed.
  8. Sprinkle with chopped fresh cilantro. Serve hot with rice or naan.

Notes

Marinating the chicken longer makes it more flavorful.
Substitute coconut cream for a dairy-free version.
For extra authenticity, char chicken pieces on a grill or in the oven before adding to the sauce.
Adjust chili to your heat preference.
