Ingredients
  

  • 2 cups jasmine rice uncooked
  • 1 1/2 cups coconut milk full-fat, canned
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1 tablespoon sugar optional, for sweetness
  • 1 tablespoon shredded coconut optional, for garnish

  • 1 Medium saucepan with lid
  • 1 Measuring cup
  • 1 Wooden spoon
  • 1 Fork for fluffing

Method
 

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using). Stir to mix well.
  3. Place the saucepan over medium-high heat and bring the mixture to a gentle boil.
  4. Reduce the heat to low and cover the saucepan with a tight-fitting lid as soon as it begins to boil.
  5. Let the rice simmer for 15 minutes, or until most of the liquid has been absorbed and the rice is tender.
  6. Turn off the heat and let the rice sit, covered, for an additional 5 minutes to finish steaming.
  7. Remove the lid and fluff the rice gently with a fork, then transfer to a serving dish.
  8. Garnish with shredded coconut if desired, then serve warm.

Notes

For extra flavor, add a few pandan leaves or a small piece of ginger while cooking.
This rice pairs exceptionally well with spicy curries or grilled seafood.
For a richer coconut flavor, substitute some of the water with more coconut milk, but do not use only coconut milk as the rice may become too sticky.
