Method
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using). Stir to mix well.
- Place the saucepan over medium-high heat and bring the mixture to a gentle boil.
- Reduce the heat to low and cover the saucepan with a tight-fitting lid as soon as it begins to boil.
- Let the rice simmer for 15 minutes, or until most of the liquid has been absorbed and the rice is tender.
- Turn off the heat and let the rice sit, covered, for an additional 5 minutes to finish steaming.
- Remove the lid and fluff the rice gently with a fork, then transfer to a serving dish.
- Garnish with shredded coconut if desired, then serve warm.
Notes
For extra flavor, add a few pandan leaves or a small piece of ginger while cooking.
This rice pairs exceptionally well with spicy curries or grilled seafood.
For a richer coconut flavor, substitute some of the water with more coconut milk, but do not use only coconut milk as the rice may become too sticky.
