Ingredients
  

  • 1 cup cottage cheese Room temperature.
  • 2 1/4 teaspoons active dry yeast 1 packet (7 g).
  • 1/4 cup warm water About 38°C (100°F).
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter Melted.
  • 2 large eggs Room temperature.
  • 3 1/4 cups bread flour
  • 1 1/2 teaspoons salt

  • 1 small saucepan

  • 1 measuring cups and spoons
  • 1 stand mixer with dough hook (optional)
  • 1 loaf pan (9x5 inch)
  • 1 kitchen towel or plastic wrap
  • 1 oven

Method
 

  1. In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and stir lightly. Let it sit for 5-10 minutes until foamy.
  2. In a small saucepan, gently heat cottage cheese until just warm, stirring frequently. Set aside to cool slightly.
  3. In a large mixing bowl, combine the cottage cheese, eggs, melted butter, and salt. Mix well.
  4. Add the yeast mixture to the bowl. Stir to combine.
  5. Gradually add bread flour, mixing as you go until a soft dough forms. Knead for 6-8 minutes by hand or 5 minutes with a stand mixer, until the dough is smooth and elastic.
  6. Place the dough in a lightly greased bowl. Cover with a kitchen towel or plastic wrap and let it rise in a warm place until doubled in size, about 1 hour.
  7. Punch down the dough and shape into a loaf. Place in a greased 9x5 inch loaf pan.
  8. Cover and let rise until the dough domes just above the pan’s edge, about 30 minutes.
  9. Preheat oven to 180°C (350°F).
  10. Bake for 35 minutes, until golden brown and the loaf sounds hollow when tapped.
  11. Remove from the pan and cool on a wire rack before slicing.

Notes

Low-fat or full-fat cottage cheese both work, but full-fat yields a richer flavor.
For a savory twist, mix in chopped herbs or dried onion.
Store leftovers tightly wrapped at room temperature for up to 2 days or freeze slices for up to 1 month.
