- In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and stir lightly. Let it sit for 5-10 minutes until foamy.
- In a small saucepan, gently heat cottage cheese until just warm, stirring frequently. Set aside to cool slightly.
- In a large mixing bowl, combine the cottage cheese, eggs, melted butter, and salt. Mix well.
- Add the yeast mixture to the bowl. Stir to combine.
- Gradually add bread flour, mixing as you go until a soft dough forms. Knead for 6-8 minutes by hand or 5 minutes with a stand mixer, until the dough is smooth and elastic.
- Place the dough in a lightly greased bowl. Cover with a kitchen towel or plastic wrap and let it rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and shape into a loaf. Place in a greased 9x5 inch loaf pan.
- Cover and let rise until the dough domes just above the pan’s edge, about 30 minutes.
- Preheat oven to 180°C (350°F).
- Bake for 35 minutes, until golden brown and the loaf sounds hollow when tapped.
- Remove from the pan and cool on a wire rack before slicing.
Notes
Low-fat or full-fat cottage cheese both work, but full-fat yields a richer flavor.
For a savory twist, mix in chopped herbs or dried onion.
Store leftovers tightly wrapped at room temperature for up to 2 days or freeze slices for up to 1 month.
