Ingredients
  

  • 8 slices day-old bread Cut into 1-inch cubes.
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter Melted.
  • 2 tablespoons brown sugar For topping.
  • 1/2 teaspoon ground cinnamon For topping.
  • 2 tablespoons unsalted butter Melted, for topping.

Equipment

  • 1 large baking dish about 9x13 inches
  • 1 medium mixing bowl
  • 1 whisk
  • 1 set measuring cups and spoons
  • 1 spatula

Method
 

  1. Preheat your oven to 175°C (350°F). Grease the baking dish with butter or nonstick spray.
  2. Arrange the bread cubes evenly in the prepared baking dish.
  3. In the mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla, cinnamon, salt, and melted butter until smooth.
  4. Pour the egg mixture evenly over the bread cubes, gently pressing down with a spatula to ensure all pieces are soaked.
  5. In a small bowl, mix together the brown sugar and cinnamon for the topping. Sprinkle over the casserole. Drizzle melted butter on top.
  6. If preparing ahead, cover and refrigerate for up to 12 hours. If baking immediately, let the casserole sit for 10 minutes to absorb the liquid.
  7. Bake uncovered for 40 minutes, until the top is golden and the center is set.
  8. Cool for 5-10 minutes before serving warm.

Notes

For extra crunch, add a handful of chopped pecans or walnuts to the topping.
A French baguette or brioche can be substituted for the bread for richer flavor.
Serve with maple syrup, berries, or a dusting of powdered sugar for garnish.
Leftovers can be stored covered in the fridge for up to 3 days and reheated in the microwave or oven.
