Ingredients
  

  • 8 slices white bread Thick cut preferred.
  • 3 large eggs
  • 180 ml whole milk 3/4 cup.
  • 2 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons unsalted butter For frying.
  • to taste maple syrup For serving (optional).
  • to taste powdered sugar For dusting (optional).

Equipment

  • 1 large mixing bowl
  • 1 whisk
  • 1 sharp knife
  • 1 large non-stick skillet or griddle
  • 1 spatula
  • 1 plate lined with paper towels

Method
 

  1. Using a sharp knife, cut each bread slice diagonally into two triangles to make corners. You should have 16 corners in total.
  2. In a large mixing bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  3. Heat 1 tablespoon butter in a large non-stick skillet or griddle over medium heat.
  4. Dip each bread corner into the egg mixture, coating both sides well without soaking too long.
  5. Place the dipped bread corners in the skillet. Cook for about 2-3 minutes on each side until golden brown. Cook in batches; add more butter as needed.
  6. Transfer cooked corners to a plate lined with paper towels to absorb any excess butter.
  7. Serve warm, stacked or spread out. Drizzle with maple syrup and dust with powdered sugar if desired.

Notes

You can use whole wheat, brioche, or challah bread for varied flavor and texture.
For a dairy-free option, substitute milk with almond, oat, or soy milk, and use vegan butter.
These corners make great finger food for children and can be served as a lunchbox treat.
Add a touch of nutmeg or orange zest to the egg mixture for a flavor twist.
