Ingredients
  

  • 3 medium ripe peaches Use ripe but firm peaches for best texture.
  • 1 small red bell pepper
  • 1/4 medium red onion
  • 1 small jalapeño pepper For milder salsa, omit or use less.
  • 3 tablespoons fresh cilantro Chopped.
  • 2 tablespoons fresh lime juice From 1 lime.
  • 1/2 teaspoon salt Adjust to taste.

Equipment

  • 1 sharp knife
  • 1 cutting board
  • 1 mixing bowl
  • 1 citrus juicer or fork
  • 1 spoon for mixing

Method
 

  1. Wash and dry all produce thoroughly.
  2. Peel the peaches if desired, then dice them into small cubes. Place in the mixing bowl.
  3. Remove seeds and dice the red bell pepper into small, even pieces. Add to the bowl.
  4. Finely chop the red onion and jalapeño (remove seeds for less heat), then add to the mixture.
  5. Chop the fresh cilantro and add it in.
  6. Squeeze in the fresh lime juice and sprinkle salt over everything.
  7. Gently stir all ingredients with a spoon until evenly mixed.
  8. Taste and adjust salt or lime juice to your preference.
  9. Serve immediately, or refrigerate for up to 2 hours to let flavors meld.
  10. For a sweeter salsa, consider adding a teaspoon of honey.
