- Preheat your oven to 170°C (340°F). Line a baking tray with parchment paper.
- In a mixing bowl, beat together softened butter and sugar until light and fluffy.
- Add the egg yolk and mix until well combined.
- Sift in all-purpose flour, cornstarch, baking powder, and salt together. Add this mixture to your wet ingredients.
- Stir in the grated cheddar and parmesan cheeses until you form a soft dough.
- Scoop out rounded teaspoons of dough and roll into balls. Place them 3 cm apart on the prepared baking tray.
- Press each ball lightly with a fork to flatten slightly.
- Bake in the preheated oven for 12-14 minutes, or until the edges are golden and the tops look set.
- Remove from oven, let them cool 5 minutes on the tray, then transfer to a cooling rack to cool completely.
Notes
For extra color and flavor, sprinkle a pinch of paprika or black pepper on top before baking.
Ensure butter is softened for easier mixing and a tender crumb.
Store cooled cookies in an airtight container at room temperature for up to 4 days.
These cookies pair well with tea or as part of a cheese board.
