Ingredients
  

  • 2 cups spinach leaves Loosely packed.
  • 1 medium cucumber About 200g, sliced.
  • 2 medium green apples About 350g total, cored and chopped.
  • 1 whole lemon Peeled and deseeded.
  • 1 inch fresh ginger Peeled.
  • 1 cup cold water

Equipment

  • 1 Blender or juicer
  • 1 Cutting board
  • 1 Fine mesh strainer or cheesecloth
  • 1 Measuring cup
  • 2 Glasses

Method
 

  1. Wash the spinach, cucumber, apples, and lemon thoroughly.
  2. If using a juicer, feed the spinach, cucumber, apples, lemon, and ginger through the juicer. Collect the juice in a jug.
  3. If using a blender, add the spinach, cucumber, apples, lemon, ginger, and cold water to the blender. Blend on high until smooth.
  4. Place a fine mesh strainer or cheesecloth over a bowl. Pour the blended mixture through the strainer to separate the juice from the pulp. Use the back of a spoon to press out as much liquid as possible.
  5. Pour the strained juice into two glasses.
  6. Serve immediately over ice if desired.

Notes

Best served fresh; can be stored in the refrigerator for up to 24 hours but may separate.
Add mint, parsley, or kale for variation.
For sweeter juice, add half a pear or more apple.
If you like it tangier, use more lemon.
