  • 60 ml olive oil 4 tablespoons.
  • 60 ml soy sauce 4 tablespoons.
  • 30 ml lemon juice 2 tablespoons.
  • 30 ml honey 2 tablespoons; may substitute with maple syrup or brown sugar.
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt

Equipment

  • 1 medium mixing bowl
  • 1 whisk or fork
  • 1 gallon-size zip-top bag or shallow dish
  • 1 tongs
  • 1 grill (gas, charcoal, or grill pan)
  • 1 plate or serving platter

Method

  1. In a medium bowl, whisk together olive oil, soy sauce, lemon juice, honey, minced garlic, oregano, paprika, black pepper, and salt until well combined.
  2. Place the chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
  3. Seal the bag or cover the dish. Refrigerate and marinate for at least 30 minutes, up to 8 hours for deeper flavor.
  4. Preheat the grill to medium-high heat (about 200°C).
  5. Remove chicken from marinade and let excess drip off. Discard remaining marinade.
  6. Grill chicken for 6–8 minutes per side, or until the internal temperature reaches 74°C (165°F) and juices run clear.
  7. Remove from grill and cover loosely with foil. Rest for 5 minutes before slicing or serving.

Notes

This marinade also works well for chicken thighs or drumsticks; adjust cooking time as needed.
If preferred, substitute honey with maple syrup or brown sugar.
For best flavor, marinate overnight.
Serve with grilled vegetables, salad, or rice for a complete meal.
