Method
- Preheat your grill or grill pan to medium-high heat (about 200°C/400°F).
- Pound the chicken breasts to even thickness if needed. In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper. Rub this mixture evenly over both sides of the chicken.
- Place chicken on the preheated grill. Grill for 6-7 minutes on each side or until fully cooked (internal temperature 75°C/165°F). Remove to a plate, cover loosely with foil, and let rest for 5 minutes.
- In a large bowl, combine the salad greens, tomatoes, cucumber, red bell pepper, red onion, feta cheese, and black olives.
- In a small bowl, whisk together the dressing ingredients until well emulsified.
- Slice the grilled chicken into strips. Arrange salad mixture on plates, top with chicken, and drizzle with dressing.
- Serve immediately.
Notes
You can substitute feta cheese for goat cheese or leave it out for a dairy-free version.
For an extra crunch, add toasted nuts or seeds.
Leftover grilled chicken can be stored in the fridge for up to 3 days.
