Ingredients
  

  • 4 fillets skinless white fish (such as cod, tilapia, or snapper) About 150 grams each (600 grams total).
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice From about ½ lemon.
  • 1 teaspoon lemon zest
  • 2 cloves garlic Minced.
  • 2 tablespoons fresh parsley Finely chopped.
  • 1 tablespoon fresh dill Chopped (or 1 teaspoon dried dill).
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • as needed lemon wedges For serving.

Equipment

  • 1 grill or grill pan
  • 1 mixing bowl
  • 1 small whisk or fork
  • 1 tongs
  • 1 basting brush
  • 1 citrus zester (optional)

Method
 

  1. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, chopped dill, salt, and black pepper.
  2. Pat the fish fillets dry with a paper towel. Place them in the bowl and gently toss until each fillet is coated with the marinade. Let the fish marinate for 10 minutes at room temperature.
  3. Preheat the grill or grill pan to medium-high heat (about 200°C/400°F). Oil the grates lightly using a basting brush.
  4. Place fish fillets on the grill. Cook for 3–5 minutes per side, depending on thickness, until the fish is opaque and flakes easily with a fork.
  5. Remove the fish from the grill. Serve immediately with extra lemon wedges.

Notes

- Thicker fillets may need 1–2 extra minutes per side.
- Use a fish spatula for easy lifting and turning.
- For more flavor, add a pinch of crushed red pepper to the marinade.
- Pairs well with a green salad or roasted vegetables.
