Method
- Preheat your grill to medium heat (about 400°F / 200°C).
- Peel the sweet potatoes if desired (you can leave the skin on if you prefer). Cut each sweet potato into 1 cm thick rounds.
- Place the sweet potato slices in a large bowl. Drizzle with olive oil, sprinkle with salt, black pepper, and smoked paprika. Toss well to evenly coat.
- Place the sweet potato rounds in a single layer on the hot grill. Cover and grill for 8 minutes.
- Use tongs to flip the sweet potatoes. Grill the other side for another 7-8 minutes until tender and lightly charred.
- Remove from the grill and serve immediately.
Notes
Try garnishing with fresh chopped parsley or a squeeze of lime juice for extra flavor.
For a spicy kick, add a pinch of cayenne pepper to the seasoning mix.
Grilled sweet potatoes pair well with grilled meats and salads.
Leftovers can be stored in the fridge for up to 3 days; reheat on the grill or in a skillet for best texture.
