Ingredients

  • 1 pound ground beef 85% lean
  • 4 medium potatoes about 1.5 pounds / 700g, diced
  • 1 medium onion about 150g, diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley optional
  • 1/2 teaspoon paprika optional
  • 2 tablespoons vegetable oil
  • 1/4 cup water 60ml

Equipment

  • 1 large skillet or frying pan
  • 1 cutting board
  • 1 spatula or wooden spoon
  • 1 set measuring cups and spoons

Method

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced potatoes, season with half of the salt and pepper, and cook for 7-8 minutes, stirring occasionally, until lightly browned and starting to soften.
  3. Push the potatoes to the side of the skillet. Add the ground beef and onion to the open space. Break up the beef with a spatula and cook for 5-6 minutes until the beef is browned and onions are soft.
  4. Add the minced garlic and cook for 1 minute.
  5. Mix the potatoes, beef, and onions together in the pan. Sprinkle over the remaining salt, pepper, paprika, and parsley.
  6. Pour in the water, cover the skillet, and let simmer on low heat for another 8-10 minutes, or until the potatoes are tender and everything is well combined.
  7. Remove the lid. Let cook 1-2 additional minutes if any excess liquid remains.
  8. Taste and adjust seasoning if needed. Serve hot.

Notes

For added flavor, top with shredded cheese or chopped green onions before serving.
To add more veggies, toss in diced bell pepper or frozen peas in the last 5 minutes.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the skillet or microwave.
