Haitian French Toast

Haitian French Toast, known locally as 'Pain Patate Douce,' is a twist on classic French toast. It blends flavors like cinnamon, nutmeg, and vanilla with earthy sweet potato bread, giving you a hearty, fragrant breakfast or brunch dish with Caribbean flair.

Ingredients
  

  • 8 slices Haitian sweet potato bread or substitute brioche if unavailable.
  • 3 large eggs
  • 240 ml whole milk
  • 60 ml coconut milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 30 grams unsalted butter for frying.
  • Powdered sugar for serving (optional).
  • Maple syrup or Haitian cane syrup for serving (optional).

  • 1 large mixing bowl
  • 1 whisk
  • 1 measuring cups and spoons
  • 1 shallow dish
  • 1 large skillet or nonstick pan
  • 1 spatula
  • 1 bread knife

Method
 

  1. In a large mixing bowl, whisk together the eggs, whole milk, coconut milk, sugar, cinnamon, nutmeg, vanilla extract, and salt until well combined and slightly frothy.
  2. Pour the egg mixture into a shallow dish for easy dipping.
  3. Preheat your skillet or nonstick pan over medium heat. Add 1 tablespoon of butter to the pan and let it melt, coating the surface.
  4. Dip each slice of sweet potato bread into the egg mixture. Allow each side to soak for 5–10 seconds so it’s thoroughly coated but not soggy.
  5. Place the soaked bread slices in the hot skillet, cooking in batches to avoid overcrowding. Cook for 2–3 minutes per side, or until golden brown and crisp.
  6. Add the remaining butter to the pan between batches as needed.
  7. Serve the French toast warm, dusted with powdered sugar and drizzled with maple syrup or Haitian cane syrup.

Notes

If you can't find Haitian sweet potato bread, use thick-cut brioche or challah for a similar rich texture. Customize the toppings with sliced bananas, toasted coconut, or fresh berries to add fruity brightness.
