Ingredients
  

  • 800 grams Russet potatoes About 4 large potatoes.
  • 1.5 liters Vegetable oil For frying.
  • 2 teaspoons Salt To taste.

  • 1 large knife
  • 1 cutting board
  • 1 large bowl
  • 1 paper towels or clean kitchen towels
  • 1 heavy-bottomed pot or deep fryer
  • 1 slotted spoon or spider strainer
  • 1 baking sheet
  • 1 kitchen thermometer optional

Method
 

  1. Wash, peel (optional), and cut the potatoes into uniform 1 cm thick sticks.
  2. Place potato sticks in a large bowl of cold water and let soak for at least 10 minutes to remove excess starch.
  3. Drain potatoes and dry thoroughly with paper towels or a clean kitchen towel.
  4. In a heavy-bottomed pot, heat the oil to 160°C (320°F).
  5. Fry the potatoes in batches for 4-5 minutes until they are cooked but not yet golden. Do not overcrowd the pot.
  6. Transfer the par-cooked fries to a baking sheet lined with paper towels to drain and let them cool for 5 minutes.
  7. Increase the oil temperature to 190°C (375°F).
  8. Fry the potatoes a second time in batches for 2-3 minutes until golden and crispy.
  9. Remove fries with a slotted spoon, drain on paper towels, and immediately season with salt.
  10. Serve hot with your favorite dipping sauce.

Notes

Double frying ensures crispiness.
You can flavor the fries with additional spices like garlic powder, paprika, or fresh herbs after frying.
Use russet potatoes for best results; their high starch content produces the best texture.
Enjoy with ketchup, mayonnaise, or your favorite dipping sauce.
