Ingredients
  

  • 2 tablespoons honey Adjust honey to taste if you prefer a sweeter or less sweet drink.
  • 4 tablespoons fresh lemon juice About 1 large lemon.
  • 2 cups chilled soda water Club soda or sparkling water.
  • 6-8 ice cubes ice cubes
  • as needed slices lemon slices For garnish, optional.
  • as needed leaves fresh mint leaves For garnish, optional.

  • 1 Measuring spoons
  • 1 Spoon for stirring
  • 2 Tall glasses

Method
 

  1. Juice the lemon to get 4 tablespoons of fresh juice.
  2. In each glass, add 1 tablespoon of honey.
  3. Pour 2 tablespoons of lemon juice into each glass.
  4. Add 3-4 ice cubes to each glass.
  5. Stir the honey and lemon juice together until well combined.
  6. Top each glass with 1 cup of chilled soda water.
  7. Stir gently to combine.
  8. Garnish each glass with a lemon slice and a sprig of mint, if desired.
  9. Serve immediately while cold and fizzy.

Notes

Adjust honey to taste if you prefer a sweeter or less sweet drink.
For added flavor, add a pinch of grated ginger or a dash of bitters.
Make sure the soda water is well chilled for maximum fizz and refreshment.
Best enjoyed fresh; do not store prepared soda, as it will lose effervescence.
