Ingredients
  

  • 1 liter unsweetened soy milk Must contain only soybeans and water.
  • 2 tablespoons plain soy yogurt With live cultures (as a starter) or a commercial non-dairy yogurt starter.

  • 1 Instant Pot with yogurt setting
  • 1 Whisk or spoon
  • 1 Measuring cups
  • 1 Glass jars or container for storing yogurt
  • 1 Food thermometer (optional)

Method
 

  1. Pour the soy milk into the Instant Pot inner pot.
  2. If you want a thicker yogurt, heat the soy milk by selecting the 'Saute' function and bring it to about 80°C (180°F), stirring so it doesn’t skin or scorch. Let it cool to 43-46°C (110-115°F) before proceeding. If you skip heating, proceed to the next step (the yogurt may be slightly thinner).
  3. Add the starter yogurt to the cooled soy milk. Whisk gently until fully mixed.
  4. Close the Instant Pot lid (venting or sealing, does not matter for yogurt setting).
  5. Select the 'Yogurt' function. Set the time to 8-10 hours. Longer incubation results in tangier yogurt.
  6. When the cycle is complete, remove the lid. Give the yogurt a gentle stir.
  7. Pour the yogurt into glass jars or storage containers. Cover and refrigerate for at least 4 hours to set further.
  8. Enjoy your homemade, dairy-free yogurt with granola, fruit, or in smoothies!

Notes

Always use unsweetened, additive-free soy milk made only from soybeans and water for best results.
If your yogurt doesn’t set, your starter may be inactive, or the soy milk may not contain enough protein.
For thicker yogurt, strain through a cheesecloth after incubation.
Save a few tablespoons of your homemade yogurt as a starter for your next batch.
