Ingredients
  

  • 180 g pasta (spaghetti or linguine)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 large cloves garlic, finely chopped
  • 100 ml heavy cream For a lighter option, use half-and-half instead.
  • 40 g Parmesan cheese, grated
  • ½ teaspoon salt Plus more for pasta water.
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional) For garnish.

Equipment

  • 1 Medium pot
  • 1 Large skillet or frying pan
  • 1 Colander
  • 1 Wooden spoon or spatula
  • 1 set Measuring cups and spoons

Method
 

  1. Boil a medium pot of salted water. Add the pasta and cook according to package instructions (usually 8–10 minutes) until al dente. Reserve 50 ml of pasta water, then drain.
  2. While the pasta cooks, heat olive oil and butter in a large skillet over medium-low heat.
  3. Add chopped garlic to the skillet and sauté for 1–2 minutes, stirring constantly, until fragrant but not browned.
  4. Pour in the heavy cream and warm it gently for 1 minute.
  5. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly, about 2 minutes.
  6. Add salt and black pepper to the sauce.
  7. Toss in the drained pasta and reserved pasta water. Mix well until the sauce evenly coats the pasta.
  8. Taste and adjust seasoning if needed.
  9. Serve immediately, garnished with fresh chopped parsley if desired.

Notes

For a lighter option, use half-and-half instead of heavy cream.
Add cooked chicken, shrimp, or vegetables for extra protein and flavor.
This recipe can easily be doubled for 4 persons.
