- Boil a medium pot of salted water. Add the pasta and cook according to package instructions (usually 8–10 minutes) until al dente. Reserve 50 ml of pasta water, then drain.
- While the pasta cooks, heat olive oil and butter in a large skillet over medium-low heat.
- Add chopped garlic to the skillet and sauté for 1–2 minutes, stirring constantly, until fragrant but not browned.
- Pour in the heavy cream and warm it gently for 1 minute.
- Stir in the grated Parmesan cheese until melted and the sauce thickens slightly, about 2 minutes.
- Add salt and black pepper to the sauce.
- Toss in the drained pasta and reserved pasta water. Mix well until the sauce evenly coats the pasta.
- Taste and adjust seasoning if needed.
- Serve immediately, garnished with fresh chopped parsley if desired.
Notes
For a lighter option, use half-and-half instead of heavy cream.
Add cooked chicken, shrimp, or vegetables for extra protein and flavor.
This recipe can easily be doubled for 4 persons.
