Ingredients

  • 4 slices sliced bread (thick-cut, such as brioche or challah) Use thick, slightly stale bread to avoid sogginess.
  • 2 large eggs
  • 80 ml milk
  • 3 tablespoons creamy peanut butter
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon vanilla extract
  • a pinch salt
  • 1 tablespoon unsalted butter (for cooking)

Equipment

  • 1 medium mixing bowl
  • 1 shallow dish or pie plate
  • 1 whisk or fork
  • 1 non-stick skillet or griddle
  • 1 spatula
  • 1 measuring cups and spoons

Method

  1. In a medium bowl, whisk together eggs, milk, cinnamon, vanilla extract, and salt until well combined.
  2. Spread 1.5 tablespoons of peanut butter onto two of the bread slices. Top each with the remaining bread slices to make two sandwiches.
  3. Preheat your skillet or griddle over medium heat. Add half of the butter to melt.
  4. Dip each peanut butter sandwich into the egg mixture, making sure both sides are well coated but not soggy.
  5. Place the dipped sandwiches on the hot skillet. Cook for about 3-4 minutes per side, until golden brown and crispy. Add more butter to the pan if needed when flipping.
  6. Once cooked, remove from the pan, slice in half if desired, and serve immediately with your favorite toppings like maple syrup, fruit, or a sprinkle of powdered sugar.
  7. For extra indulgence, consider adding sliced bananas inside the sandwiches before dipping.
  8. Use thick, slightly stale bread to avoid sogginess.
