Ingredients
  

  • 1 piece pork tenderloin 1 pound/450 grams
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Equipment

  • 1 roasting pan or baking dish
  • 1 small bowl
  • 1 sharp knife
  • 1 cutting board
  • 1 meat thermometer
  • 1 aluminum foil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the pork tenderloin on a cutting board and trim any silver skin if necessary.
  3. In a small bowl, mix together olive oil, minced garlic, salt, black pepper, paprika, thyme, and rosemary.
  4. Rub the seasoning mixture evenly all over the pork tenderloin.
  5. Place the seasoned pork into a roasting pan or baking dish.
  6. Roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven, cover loosely with aluminum foil, and let rest for 5 minutes.
  8. Slice the pork tenderloin into medallions and serve warm.

Notes

Resting the pork before slicing helps retain juices and keep it tender.
Pair with roasted vegetables or mashed potatoes for a complete meal.
For extra flavor, marinate the pork in the seasoning mixture for 1-2 hours before roasting.
