- Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a small saucepan or microwave-safe bowl, gently whisk together the egg white and water until frothy. Stir in the vanilla extract.
- In a medium bowl, combine granulated sugar, brown sugar, salt, cayenne pepper, cinnamon, and black pepper.
- Add the mixed nuts to the egg white mixture, tossing until well coated.
- Pour the sugar and spice mixture over the coated nuts and stir thoroughly until all nuts are evenly covered.
- Spread the nuts in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20-22 minutes, stirring the nuts halfway through to ensure even coating and prevent burning.
- Remove from oven and let cool completely on the baking sheet. The nuts will become crisp as they cool.
Notes
Store cooled nuts in an airtight container for up to one week.
Adjust the level of cayenne for more or less heat, as desired.
