Ingredients
  

  • 300 grams fresh spinach About 10 ounces.
  • 150 grams cream cheese, softened About 2/3 cup.
  • 120 grams sour cream 1/2 cup.
  • 60 grams mayonnaise 1/4 cup.
  • 2 cloves garlic, minced
  • 45 grams Parmesan cheese, grated 1/2 cup.
  • 90 grams Mozzarella cheese, shredded 3/4 cup.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Equipment

  • 1 medium skillet
  • 1 mixing bowl
  • 1 cutting board
  • 1 measuring cups and spoons
  • 1 oven-safe baking dish optional if baking for extra warmth

Method
 

  1. Wash and roughly chop the spinach.
  2. Heat olive oil in a medium skillet over medium heat. Add the spinach and sauté for 2-3 minutes, until wilted. Let it cool, then squeeze out any excess liquid.
  3. In a mixing bowl, combine the cream cheese, sour cream, and mayonnaise. Stir until smooth.
  4. Add the minced garlic, grated Parmesan, shredded mozzarella, salt, and black pepper to the mixture. Mix well.
  5. Chop the cooled spinach and add it to the mixture. Stir until everything is well combined.
  6. Transfer the dip to a serving bowl. If you prefer it warm, spread it in an oven-safe dish and bake at 180°C (350°F) for 10 minutes, until bubbly and golden on top.
  7. Serve with sliced baguette, pita chips, or vegetable sticks.

Notes

You can use frozen spinach instead of fresh—just thaw 250 grams, squeeze well, and proceed. For extra flavor, add a pinch of nutmeg or a dash of hot sauce. Keeps well in the fridge for two days; reheat gently if serving warm.
