Method
- Wash and roughly chop the spinach.
- Heat olive oil in a medium skillet over medium heat. Add the spinach and sauté for 2-3 minutes, until wilted. Let it cool, then squeeze out any excess liquid.
- In a mixing bowl, combine the cream cheese, sour cream, and mayonnaise. Stir until smooth.
- Add the minced garlic, grated Parmesan, shredded mozzarella, salt, and black pepper to the mixture. Mix well.
- Chop the cooled spinach and add it to the mixture. Stir until everything is well combined.
- Transfer the dip to a serving bowl. If you prefer it warm, spread it in an oven-safe dish and bake at 180°C (350°F) for 10 minutes, until bubbly and golden on top.
- Serve with sliced baguette, pita chips, or vegetable sticks.
Notes
You can use frozen spinach instead of fresh—just thaw 250 grams, squeeze well, and proceed. For extra flavor, add a pinch of nutmeg or a dash of hot sauce. Keeps well in the fridge for two days; reheat gently if serving warm.
