- Pat the steaks dry with paper towels. Let them come to room temperature for about 10 minutes.
- Rub both sides of each steak with olive oil, salt, and black pepper.
- Heat the skillet over high heat until very hot but not smoking, about 2 minutes.
- Place the steaks in the skillet. Sear without moving for 3 minutes, until a golden-brown crust forms.
- Flip the steaks with tongs. Add butter, smashed garlic, and rosemary to the skillet.
- Tilt the skillet slightly and, using a spoon, baste the steaks with the melted butter while they cook for another 2-3 minutes for medium-rare (internal temperature should be 54°C/130°F).
- Remove steaks from the skillet and let them rest on a plate, tented with foil, for 5 minutes before cutting.
- Slice, serve, and enjoy!
Notes
For a more well-done steak, cook an additional 1-2 minutes per side.
Letting the steak rest is crucial for juicy results.
