Ingredients
  

  • 8 slices thick-cut white bread or brioche For best results, use slightly stale bread.
  • 4 large eggs
  • 240 ml whole milk Can substitute with half-and-half for a richer version.
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • a pinch salt
  • 2 tablespoons unsalted butter For greasing the skillet.
  • to taste maple syrup For serving (optional).
  • to taste powdered sugar For dusting (optional).
  • to taste fresh berries For serving (optional).

Equipment

  • 1 large mixing bowl
  • 1 whisk or fork
  • 1 shallow dish or pie plate
  • 1 skillet or griddle large enough for 2-3 slices at a time
  • 1 spatula
  • 1 set measuring cups and spoons

Method
 

  1. In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until fully combined.
  2. Pour the egg mixture into a shallow dish wide enough to fit the bread slices.
  3. Preheat your skillet or griddle over medium heat. Add 1/2 tablespoon of butter and swirl to coat.
  4. Dip one slice of bread at a time into the egg mixture, allowing each side to soak for about 10-15 seconds. Do not oversoak or bread will fall apart.
  5. Place the soaked bread slices into the hot skillet (cook 2-3 at a time). Cook on the first side for about 2-3 minutes, until golden brown.
  6. Flip each slice and cook for another 2-3 minutes on the other side, until cooked through and golden. Repeat with remaining bread, adding more butter to the skillet as needed.
  7. Serve immediately with maple syrup, a dusting of powdered sugar, and fresh berries if desired.
  8. For best results, use slightly stale bread as it soaks up the egg mixture better without falling apart.
  9. You can substitute whole milk with half-and-half for an extra rich version.
  10. Leftover French toast can be frozen: let cool, wrap tightly, and reheat in a toaster or oven.
