- In a mixing bowl, combine drained black beans, corn, diced onion, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper.
 - Use a potato masher or fork to partially mash the beans, leaving some whole for texture. Stir in chopped cilantro.
 - Warm the tortillas slightly in the microwave (about 30 seconds) to make them pliable.
 - Add about 2-3 tablespoons of the filling to the lower third of each tortilla. Roll up tightly.
 - Lightly brush each rolled taquito with olive oil.
 - Preheat your air fryer to 190°C (375°F) for 2 minutes.
 - Place taquitos seam side down in the air fryer basket, being careful not to overcrowd (cook in batches if needed).
 - Air fry for 10-12 minutes, flipping halfway, until crisp and golden brown.
 - Serve warm with salsa, guacamole, or vegan sour cream if desired.
 
Notes
For added creaminess, add 2 tablespoons of vegan cream cheese to the filling.
If tortillas crack during rolling, warm them longer or wrap in a damp towel.
Adjust seasonings to taste or add chopped jalapeño for heat.
