Vegan Air Fryer Taquitos

These crispy vegan taquitos are filled with a savory mixture of black beans, corn, and spices, then air fried to golden perfection. Perfect as an appetizer, snack, or light main dish, they’re easy, healthy, and everyone loves them!

Ingredients
  

  • 1 can black beans 400 g / 15 oz, drained and rinsed.
  • 120 g frozen corn Thawed.
  • 60 g diced red onion
  • 2 cloves garlic Minced.
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh cilantro
  • 8 small corn tortillas 15 cm / 6-inch.
  • 2 tbsp olive oil For brushing.

Equipment

  • 1 air fryer
  • 1 mixing bowl
  • 1 potato masher or fork
  • 1 spoon
  • 1 tongs
  • 1 basting brush

Method
 

  1. In a mixing bowl, combine drained black beans, corn, diced onion, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper.
  2. Use a potato masher or fork to partially mash the beans, leaving some whole for texture. Stir in chopped cilantro.
  3. Warm the tortillas slightly in the microwave (about 30 seconds) to make them pliable.
  4. Add about 2-3 tablespoons of the filling to the lower third of each tortilla. Roll up tightly.
  5. Lightly brush each rolled taquito with olive oil.
  6. Preheat your air fryer to 190°C (375°F) for 2 minutes.
  7. Place taquitos seam side down in the air fryer basket, being careful not to overcrowd (cook in batches if needed).
  8. Air fry for 10-12 minutes, flipping halfway, until crisp and golden brown.
  9. Serve warm with salsa, guacamole, or vegan sour cream if desired.

Notes

For added creaminess, add 2 tablespoons of vegan cream cheese to the filling.
If tortillas crack during rolling, warm them longer or wrap in a damp towel.
Adjust seasonings to taste or add chopped jalapeño for heat.
