Method
- Prepare your lollipop molds by spraying lightly with nonstick spray or brushing with oil. Place a lollipop stick in each mold.
- In a medium saucepan, combine sugar, corn syrup, and water. Stir to mix.
- Place the pan over medium-high heat. Stir constantly until the sugar dissolves and the mixture begins to boil.
- Attach the candy thermometer to the pan. Continue boiling the syrup (without stirring) until it reaches 300°F (hard crack stage). This takes about 8-10 minutes.
- Once the correct temperature is reached, remove the pan from the heat immediately.
- Working quickly, stir in the flavored extract and food coloring.
- Carefully spoon or pour the hot mixture into each lollipop mold, covering the sticks. Do not overfill.
- Let lollipops cool and harden at room temperature for about 15 minutes before removing them from the molds.
Notes
Always use caution when working with hot sugar syrup; it's extremely hot and sticky.
Experiment with different extracts and food colorings for fun flavor combinations.
Store lollipops in airtight wrapping or containers to keep them fresh.
